Cod with Ratatouille and Alioli Au Gratin
Cod Loin 180 g Aubergine 50 g Onion 50 g Red Bell Pepper 50 g Zucchini 50 g Crushed Tomato 50 g Garlic 1 clove Egg Yolk 1 unit Olive Oil 2 tablespoons + 45 g Salt and pepper 1 pinch
1. Cut the vegetables into small dice, place them on the grill with two tablespoons of olive oil, salt and pepper. Bake in the oven for 30 minutes at 180ºC.
2. Make alioli with the egg yolk, the garlic and oil.
3. Add the tomato, place over the cod and cook for 10 minutes at 180ºC.
4. Cover the cod with the alioli and cook for 5 minutes more with the grill open.
