Aubergine cake

Ingredients

Shortcrust dough, 2 eggplants,150 g lean pork meat chopped, 1/2 onion, 100 g bacon, 125 ml cream, 30 g grated Parmesan cheese, 4 table spoons olive oil, salt

Preparation

Place the pastry inside a pie mould and bake in a preheated oven at 200ºC for 5-6 minutes. Wash and slice the eggplant into sheets. Heat the oil in a frying pan and sautee the chopped onion for 5-6 minutes. Add the chopped meat and when it is almost done, add the bacon and then the cream. Fill the mould with a layer of eggplant and a layer of the meat mixture then sprinkle the Parmesan cheese on top. Place in a preheated oven at 180ºC for 45 minutes.
